I'll get away from the French at some point. (And get away from desserts too. They're making me slightly sugar-ill, even though I'm making them for other people mostly)
These are good for having with your tea around four-ish. Look sharp. Sit with your hands in your lap and your back straight. Wear that vaguely Elizabeth Bennetian dress. Eat all the sables before that dratted Mr. Darcy gets here.
Sables:
10 tablespoons (140 grams) unsalted butter, room temperature
1/2 cup (100 grams) granulated white sugar
1 large egg
1 teaspoon pure vanilla extract
2 cups (280 grams) all purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
Egg Wash:
1 large egg
1 tablespoon water
1) Beat butter and sugar until light and fluffy (2-3 minutes) with the electric mixer. Add the egg and vanilla extract and beat until blended.
2) In a separate bowl, whisk together the flour, baking powder and salt. Add the flour mixture to the butter mixture and beat just until incorporated. Don't overmix the dough.
3) Transfer the dough to a lightly floured work surface, knead the dough a few times to bring it together, and then divide the dough in half. Wrap each half in plastic wrap and refrigerate until firm. I left them in there for a few hours.
For me, cookies are hit or miss. I usually have some sort of issues with the flour. I either add too much or too less. I added a few more tablespoons than the specified amount because the dough wasn't holding itself together.
4) Preheat oven to 350 degrees F (177 degrees C).
5) Remove one portion of the dough from the refrigerator and place on a lightly floured work surface. Roll out the dough until it is 1/4 inch (1 cm) thick.
The recipe said to use a fluted cookie cutter, and admittedly, they look very pretty, but really, who has a fluted cookie cutter? And I'm all about making my food look bite sized and cute. So I used a shot glass...

Please do not take shots while doing this. (though admittedly, it would make for a good drinking game and interestingly flavoured cookies...) Never mind. You can do this. Just use a nice liquor. I'm thinking a citrus one, because I read another recipe for lemon sables so it could work-
Right. Back to the recipe. Ahem.
10) Again, the recipe said to place the baking sheet of cut out cookies in the refrigerator for about 15 -20 minutes to chill the dough, but I didn't do it. Meanwhile, make the egg wash, which will make your cookies look golden brown and yummy instead of pale and pasty like Voldemort's face in the first movie.
Egg Wash: In a small bowl, whisk the egg with the water. Brush the tops with the egg wash. You CAN make a criss-cross pattern with a fork on top of the cookie, but I found this just squished the cookie down and made it thinner. Bake cookies in the preheated oven for about 12-14 minutes (depending on size of cookie) or until golden brown around the edges.
